Professional frying · 3D filtration

Better fries. Longer oil life. Less waste.

Zilberman brings you a 3D solution for frying oil: filtration by the machine, filtration through paper, and filtration with powder. Three dimensions working together in one cycle, so the oil stays clean and the fry stays the same from the first basket to the last.

We started from a simple ambition: raise the quality of frying everywhere, and do it in a way that respects our planet. Cleaner oil lasts longer. Oil that lasts longer means fewer litres bought, fewer litres thrown away, and less to transport and dispose of.

  • Machine filtration
  • Paper filtration
  • Powder filtration

The 3D solution

Three ways to clean oil, built to work as one.

Each dimension removes what the others cannot. The machine moves and filters the oil without anyone carrying it. The paper holds back crumbs and carbon. The powder binds the dissolved compounds that make oil dark, foamy and bitter.

Dimension 1 · Machine

Filtration built into the fryer

One touch drains the vat, pushes the oil through the filter and pumps it back. No hot oil on the move, no separate unit to wheel in.

Dimension 2 · Paper

Paper filters that catch the solids

Pre-formed filter paper traps breadcrumbs, batter flakes and burnt particles, the debris that would otherwise keep cooking in the oil.

Dimension 3 · Powder

Filter powder for what you cannot see

A purifying powder dosed at each cycle adsorbs free fatty acids, colour and off-flavours, the part a paper filter lets straight through.

Dimension 1 · Machine filtration

A fryer designed around its own filter.

The vat, valves, pump and screen are designed together, so filtering is a normal step of service rather than a job left for closing time. The crew starts the cycle on the screen and goes back to work.

  • CycleDrain, filter, return to the vat, back to temperature
  • SafetyNo lifting or pouring of hot oil by staff
  • ControlTouch screen with frying and filtering programmes

Dimension 2 · Paper filtration

The first barrier: solids stay in the paper.

Every crumb left in the vat keeps burning and speeds up the breakdown of the oil. Our filter papers are sized for professional fryers and hold back fine particles while letting the oil flow quickly.

  • FormatPre-formed papers and envelopes, easy to change
  • ResultClearer oil and less taste transfer between products

Dimension 3 · Powder filtration

The second barrier: what dissolves, the powder binds.

As oil works, it builds up free fatty acids and polar compounds. They don't show as particles, so paper cannot stop them. The filter powder adsorbs them during the cycle, which is what slows the darkening and keeps the flavour clean.

Why we do it

Better frying, and a lighter footprint.

Quality and the environment point in the same direction. Oil that is filtered well every day produces better food, and it has to be replaced far less often.

Frying quality

The same fry, all day long

Guests notice when fries turn dark, greasy or bitter late in the evening. Clean oil keeps colour, crunch and taste steady from opening to close.

  • Crisp, golden results that look and taste freshly made
  • Neutral taste, without carry-over between products
  • Oil kept within the legal limits on total polar materials
25 %TPM limit for frying oil in Belgium. Filtering keeps you clear of it for longer.

Our planet

Fewer litres used, fewer litres wasted

Every extra day of oil life is oil that doesn't have to be grown, refined, shipped, collected and processed as waste.

  • Less fresh oil bought, so fewer deliveries to the kitchen
  • Less used oil to collect and dispose of
  • A cleaner, safer kitchen with no hot oil carried around
